Lower-fat milk

I just learned that there are actually scientists out there, breeding certain cows to produce lower-fat milk. They learned of lower-fat milk by researching a cow who's milk contained 1% fat. This cow carried a natural gene mutation in one animal. This genetic trait seems to be dominant, as the cow's offspring also carry lower-fat milk. You can expect to see butters and milks from this type of cow in about 2011.
